Coconut Fried Fish and Chips

Try our recipe for Fish and Chips fried in low fat coconut oil and battered with gluten free almond flour!
Ingredients
Fish
1 lb Cod or any fish of choice
2 tsp onion powder
2 tsp garlic powder
2 tsp ground ginger
2 cups coconut oil
1 cup almond flour
2 tbs coconut flakes
2 eggs
1/2 cup coconut milk
1 tsp sea salt
- In a large frying pan melt 2 cups of coconut oil on stovetop until perfect for frying. A good way to test this is to wet your hand slightly and flick a tiny bit of water into the pan. The oil should fizz slightly. If it pops, it is too hot and you should take the pan off of the heat.
- In a large bowl clean off fish filets and season with onion powder, garlic powder, and ground ginger. Set aside.
- Mix eggs and coconut milk together in one bowl and almond flour, coconut flakes, and sea salt in another.
- Make an assembly line from the fish to the frying pan. The order should be fish, wet ingredients, dry ingredients, frying pan, and plate.
- Coat the fish in the wet ingredients first, lightly cover in the dry, and then send to the frying pan.
- Once the coating is golden brown and crispy, put on a plate (add a paper towel underneath to catch excess oil).
- Repeat until all filets are cooked.
- Enjoy!
Chips
2 Large Sweet Potatoes
2 Tbs Olive Oil
1 Tsp Sea Salt
1 Tsp Cracked Pepper
- Preheat oven to 275℉
- Peel potatoes and slice very thin with either a mandoline, potato peeler, or very sharp knife.
- In a large bowl toss all ingredients together.
- Bake for about 2 hours or until crispy.
- Remove from oven and allow them to cool for 10 minutes or until warm.
This also goes well with sweet potato fries!
