Fluffy High Protein Crêpes

Who else is really craving some fluffy and delicious protein crêpes for a midnight snack?

Ingredients
1 cup Flour
2 scoops VPro Plant Protein (any flavor)
1 cup Coconut Milk/Soy milk
1/4 cup Water
4 tbsp Non-Dairy margarine, melted
1 tbsp Sugar
2 tbsp Maple Syrup
1 Scoop Ice Cream (optional)
Chocolate Sauce (optional)
Caramel Sauce (optional)
Chopped Peanuts (optional)
- Mix flour, coconut milk, water, butter, VPro, and syrup in a large bowl and mix until smooth. Refrigerate for 2 hours.
- Be careful because crêpes are extremely delicate and will fall apart if handled incorrectly. Make your first one kind of small for practice. It will be ugly at first but they will get a lot better! Lightly oil the pan and keep the heat on medium to avoid burning.
- Ladle some of the batter in the pan (about 3 tablespoons). Use the back of the spoon to swirl it around the pan and make them thinner and cover the skillet’s bottom. Wait a few minutes for the top to start bubbling and lifting around the edges.
- Flip it over and cook the other side until light brown. Repeat until you run out of batter. If the pan gets too hot, take it off of the heat and let it cool off a bit before starting the next one.
