Cilantro Lime Quinoa
1 1/4 cup Uncooked Quinoa
1/4 cup Fresh Cilantro, Chopped
1/3 cup Lime Juice
2 tbs Extra Virgin Olive Oil
1/2 tsp Black Pepper
1 1/4 tsp Salt
- Cook quinoa according to directions on package.
- In a separate bowl mix other ingredients together and pour over quinoa.

For the Salsa:
2 Small/Medium Tomatoes, Diced
1/2 Red Onion, Diced
1 Jalapeno Pepper, Minced

- For the salsa, combine all ingredients in a small bowl, set aside or in the fridge.
- Season corn with the chili powder and chipotle powder. Stir and set aside.
- In a large bowl place cooked cilantro lime quinoa on the bottom (about 1 cup).
- On top add corn, beans, salsa, meat, and avocado.
