Sweet Potato Chipotle Black Bean Burgers

These sweet potato black bean burgers are sure to get your body pumped full of protein.
Ingredients
2 cups mashed baked sweet potato
(2 large)
1 cup cooked black beans; rinsed and drained
1-1 1/2 cups brown rice or quinoa
1/2 cup walnut or pecan meal
(finely chopped)
1/2 cup finely diced green onion
2 1/2 tsp ground cumin
1 tsp paprika
1/4 tsp each of salt and pepper
1/4 tsp chipotle powder
- Preheat oven to 400
- Add all ingredients together into a bowl. Mix together.
- Mold into 1 1/2 – 2 inch patties
- Bake for 30-45 Minutes flipping over every 20 minutes.
- Serve on a bun, in lettuce, or eat alone with your favorite dressing!
Goes great with sweet potato fries!
