1.5 cups flour
1/2 cup VPro Plant Protein (Vanilla)
1/2 tsp liquid stevia (or to taste)
1/2 tsp salt
1/2 tsp vanilla extract
2 teaspoons baking powder
1 cup soy milk (or any non-dairy milk)
1/4 cup oil
1 cup chopped apples
1 tbs cinnamon
- Combine flour, VPro, salt, baking powder, and cinnamon in a mixing bowl. Mix in soy milk, stevia, oil.
- Gently fold in apples.
- Pour into paper cups in a muffin pan and bake at 400 degrees for 25-30 minutes.
